500D with kit 18-55..... couldn't afford the dual lens kit at the moment, but hopefully will be able to get a 55-250 IS next month.... nearly bought a 40D but the extra weight put me off as I'll have to hoik it up mountains with me.

The 55-250 is a great lens, I have one of those. The build quality is crap and plasticky and the auto focus is loud and a bit jerky, but for the price, it takes really sharp shots with good image quality. It's also very light weight too.
Aye, the 40D isn't just heavy, it's huge too, so probably not ideal for your needs.
