The real difference is in access time, that you will notice in real use.
Tranfer rates are good enough for both.
But the thing is you could get two seagates and put them in RAID1 for security at the same price of one Velociraptor, wich would be a wiser choice for video editing.
I think the Velociraptor targets mostly gamers and enthusiast, wich do not look for huge amounts of space but seek only speed at a reasonable price (ie without buying a SAS controller and multiple disks).

Yup,
Looks like SAS will be a feature on a few X58 boards soon too.

Yeah, it's the access time and IO speed that make Raptors so good.
