Software That You Use Regularly That Really Works Your PC?
I'm looking for everyday applications (NOT benchmarking software or games) that really give your CPU and/or Memory a good workout.
Stuff that you use regularly (ish), maybe video/audio encoding, photo editing, compression software...whatever.
Please list it here

Winrar, it's about the only application I use regularly that fully utilises both cores on my boxen. And folding@home SMP client but not sure if that fits your criteria?

To encode i use VirtualDubMod 1.5.10.2, it opens decrypted VOB files and lets you encode them with any VFW codec, ie Divx, XviD, x264. To open and encode decrypted .m2ts files i use Avidemux 2. Encoding scales well at least up to 4 cores, and if you are encoding with high quality settings will hardly reach real time speed (ie less than 25 fps for us europeans) even with a quad.
Download locations:
x264 VFW
XviD
Divx
VirtualDubMod
Avidemux 2

As above, usual suspects that fall into those cats. Get them all running at once, multi-tasking, that should throw up some interesting results. ....get Firefox in their too, with 10 tabs worth of youtube music videos opened up and playing.

3DS Max, Photoshop, Zbrush.
rarely, but i sometimes need to use Premiere too
There all really RAM hungry, gives your CPU a good workout too, definitely when rendering as it maximises it at 100% load non stop until its done, which can be anything from minutes to days on end, even weeks.

Azureus, now called Vuze : Bittorrent Client
don't forget to throw the java based Azureus bittorrent client into the mix. Get some torrents going at the same time.

You don't have to load the Vuze layer if you don't want, you can revert to the old Azureus, it should half the load of the Vuze layer. But then again, that's not the point of the thread.
Load it up with the Vuze beginners UI.
